Chocolate Zucchini Bread

Equipment
- Bosch Mixer
- Norpro Pans
Ingredients
- 3 each eggs
- 1 Cup olive oil
- 1 1/2 Cups white sugar
- 1/2 cup Light Brown Sugar
- 2 tsp vanilla extract
Dry Ingredients – Step 2
- 2 1/2 cups flour
- 1/2 cup unsweetened dark cocoa powder
- 1 tsp salt
- 1 tsp cinnamon
Chocolate Chips and Zucchini- Step 3
- 1 cup semi-sweet chocolate chips
- 2 cups shredded zucchini, drained a little
Instructions
- Preheat oven to 350F
- Mix together the wet ingredients: sugar, brown sugar, oil, eggs and vanilla extract
- In a separate bowl, mix dry ingredients: flour, cocoa powder, sale, baking soda, cinnamon
- Combine the wet and dry ingredients
- Add zucchini, combine well
- Add chocolate chips and mix
- Grease and flour or use cooking spray in 2 long (10 inch) baking pans and add batter.
- Bake at 400f for 60-65 minutes
- Let cool 15-20 minutes before tipping it out of the pan
