My friend, Susan gave me a bunch of mangos that were approaching the “almost too late” stage. I did not want them to go to waste, so I searched online and found the following recipe. I made a bunch of these for the Farmer’s market and sold out immediately. I made one change the first time I made them: I only had regular raisins in the house, so I used those. The next time, I use the golden ones and it did not seem to make a difference in taste. They were yummy, delicious either way. I used Prairie Gold flour that I milled, and used Cane Juice Crystals (organic sugar).
Hawaiian Mango Bread
2 cups flour
2 tsp. baking soda
1 1/2 tsp salt
2 tsp cinnamon
3 eggs
1/2 cup oil
1 1/3 cup Cane Juice Crystals (you can substitute table sugar)
1 tsp vanilla
1/2 cup golden raisins (you can substitute regular raisins)
1/2 cup chopped nuts (I used walnuts)
2 cups diced mango
1/4 cup flaked coconut
Preheat oven to 350 degrees. Grease pan. Sift flour, baking soda, salt. and cinnamon into a large mixing bowl. Add remaining ingredients, mixing thoroughly. Pour into pan andlet sit for 20 minutes. Bake 1 hour
