You may remember my recent post regarding being afraid of your pressure cooker. After that post went to the site, I was contacted by Jill Nussinow, The Veggie Queen! She has created a DVD that teaches pressure cooking. I immediately requested a copy and watched it together with my daughters today.
Now, at a glance a pressure cooking DVD may seem dull, but this DVD was a delight to watch. Jill is a vegetarian, and she demonstrated how to use the pressure cooker to make all kinds of delicious and nutritious meals in very little time in a pressure cooker.
Her style was so friendly. As she prepared each recipe, she described the ingredients and the health benefits of all of them. As she talked about the recipes, she shared alternative ingredients if there were some that were not available to you, or if you did not like them. I loved her easy, pleasant style.
The video was a high quality production with clear pictures, good sound quality, and vivid colors. It moved quickly from recipe to recipe, and included a booklet that had some summary information and all the recipes she demonstrates on the video. She also talks about pressure cooker safety, choosing a pressure cooker, and showed the different sizes and helped someone wanting to buy one know which size to choose.
She taught how to use the pressure cooker for dishes that included rice and beans, both of which I have never tried in my pressure cooker. I feel so empowered now, that I know I will be trying to make my own black beans in there, rather than buying them from a can.
Jill also talked about how to adjust your favorite recipes for pressure cooking. She shared tips on adjusting the water, adjusting spices, and what to do if your food is not completely cooked as you expected.
My daughters (17, 10 and 7) all watched the video with me. They all agreed that it was well done, and the recipes looked so yummy, everyone wanted to go make the recipes we were learning.
If you are new to using a pressure cooker, or if you just use it for a couple of recipes, this will certainly give you knowledge and inspiration to try new things and really make good use of this great kitchen resource.
